We believe the best cheese comes from high-quality milk; that’s why we source our milk from Palmyra Farm in Hagerstown, Maryland. Palmyra is known for its environmental practices and internationally recognized breeds of Ayrshire cows. When it is time for cheesemaking, the Atwater’s cheese team drives all the way up to their farm in western Maryland to pick up their Ayrshire cows’ milk and bring it back to our Big Kitchen Creamery.

The history of the Ayrshire breed dates back to the nineteenth century in the County of Ayr in Scotland. Ayrshire cow’s milk has been used by cheesemakers for hundreds of years, for its perfect blend of high fat and protein that yields an exceptionally creamy and flavorful cheese.
